Vanilla Chia Pudding + Kiwi-nana mango smoothie

A quick and easy breakfast smoothie option that leaves you feeling full until snack time! If you haven’t started to add Chia seeds into your meal plan, this is the way to start. These powerful little seeds are packed full of antioxidants, are high in quality protein, and almost all the carbs that are found in them are FIBRE!

They also work great as a breakfast option because they help to provide sustainable energy, in fact, ‘chia‘ is the ancient mayan word, ‘strength‘.

Vanilla Chia Pudding & Kiwi-nana Mango Smoothie

Ingredients

  • for the chia pudding:
  • 2 tbsp chia seeds
  • ½ cup almond or soy milk
  • 1 tbsp vanilla extract
  • 1 tsp stevia sugar

  • for the smoothie:
  • 1 banana
  • ½ mango
  • 2 kiwis
  • 1 splash of water
  • 1 splash of almond or soy milk
  • 1 tsp stevia sugar
Instructions
  1. Add the chia seeds, almond or soy milk, vanilla extract and stevia sugar into a glass and stir well. Soak in the fridge for at least 4 hours or overnight. (It tastes better if left over night)
  2. Add the banana, mango kiwis, water, almond or soy milk and stevia sugar into a blender and blend.
  3. Once smooth take the chia pudding out of the fridge, stir well and add into a glass
  4. Add some kiwi slices and arrange them the way I did it but that's optional.
  5. Add the smoothie on top of the chia pudding.
