When my forever guy and I got asked to bring a plant-based app to an engagement party, I couldn’t say no! Not only are apps my preferred dishย to make, but it also gave me an excuse to play with some vegan pinwheel recipes.ย

Pinwheels were by far my favorite app before going vegan, so I knew I had to find me an alternative at some point. They are also an easy finger food, and who doesn’t love it when apps are heat-free? Talk about EASY. For everyone!๐Ÿ‘Œ๐Ÿผ

This 8-ingredient recipe couldn’t be more simple. In 15-minutes or less you’ll be serving up a taste of the Mediterranean at your next social event.

Your party guests will be saying ‘Olive You‘, too! ๐Ÿ˜˜

Pinwheels Mediterranean Style

Ingredients
  • 8 ounces (227 g) plain vegan cream cheese
  • ¼ cup lightly packed frozen spinach, thawed and squeezed dry (optional)
  • ½ cup cherry tomatoes chopped into small pieces
  • ½ cup black olives, cut into rings
  • 2 large cloves garlic, minced
  • Pinch of sea salt and black pepper
  • 2 large flour tortillas (be sure to check vegan friendliness on package)
  • 12 fresh basil leaves, divided
Instructions
  1. Add vegan cream cheese to a large mixing bowl.
  2. Soften the cream cheese with a spatula.
  3. Once softened add thawed spinach, cherry tomatoes, olives, garlic, salt, and pepper to a mixing bowl and mix thoroughly until combined.
  4. Divide filling between two flour tortillas and spread into an even layer across the entire tortilla.
  5. Top each tortilla with 5-6 fresh basil leaves (leaving one edge bare so the tortilla can stick to itself).
  6. Press basil down slightly to adhere.
  7. Starting from the end with the basil, tightly roll up tortillas from one end to another all the way until you reach the edge.
  8. Once rolled up, squeeze gently to compact everything and lay seam-side.
  9. Chill in the fridge overnight or serve right away.
  10. When slicing be sure to use a serrated knife to gently cut tortillas into ½-inch slices.
  11. Arrange on a serving platter and serve right away!
  12. Leftovers will keep well in the fridge, when covered, for 2-3 days, but are best when fresh.
Notes
Between the two tortillas, you should have a total of 20-22 pinwheels.
